made a load of stuff today: chili, corn bread, banana bread(with chocolate chips). the chili is for nachos, so i had to do sides for the nachos: ranch sour cream, guacamole, and salsa.

banana bread
1 1/2cups flour
1 teaspoon each of baking soda/salt
2 large eggs
2 ripe bananas- mashed
3/4cup brown sugar packed
1/3cup each veg oil/milk
1/2cup chopped nuts

1] heat oven to 350degreeF(185degreeC)
stir together floor, baking soda and salt in small bowl, set aside
2] stir together eggs, banana, brown sugar, oil, and milk in medium bowl until well blended.
add dry ingredients and nuts to banana mixture. stir to combine
3] pour into greased and floured(or paper lined) loaf pan. bake until wooden pick comes out clean- about 1hr

tip: use wooden spoon to mix things, no electric mixer needed

corn bread
1 cup flour
1 cup cornmeal
1/2 cup sugar
1 teaspoon salt
1 tablespoon baking powder
1 egg
1 cup of milk
1/3cup veg oil
heat oven to 200degree C
combine dry, add wet, bake 20min or until golden brown.(i've got an electric fan oven, things cook faster)
